Easy 5-Ingredient Pumpkin Turkey Chili - featured image

This Easy 5-Ingredient Pumpkin Turkey Chili is a quick, cozy fall meal that comes together in about 35 minutes. The pumpkin adds a velvety richness without any cream, balancing the turkey’s leanness perfectly for a satisfying yet light chili.

Ingredients

Scale
  • 1 pound ground turkey (93/7 lean)
  • 1 can (15 ounces) pumpkin puree
  • 1 can (15 ounces) fire-roasted diced tomatoes
  • 1 can (15 ounces) kidney beans or black beans, rinsed and drained
  • 2 tablespoons chili powder
  • Salt and pepper to taste

Instructions

  1. Brown the turkey (5-7 minutes): Place your pot over medium-high heat and add the ground turkey. Break it up with a wooden spoon as it cooks, stirring occasionally, until fully cooked with no pink remaining. Let it sit undisturbed for about a minute before stirring for better browning.
  2. Add the chili powder (1 minute): Sprinkle the chili powder over the cooked turkey and stir to coat every piece. Cook for about a minute, stirring constantly, to bloom the spice.
  3. Add the pumpkin and tomatoes (2 minutes): Pour in the entire can of pumpkin puree and the full can of fire-roasted tomatoes (liquid included). Stir until the pumpkin is fully incorporated and the mixture looks smooth. Scrape the bottom of the pot to prevent sticking.
  4. Add the beans and simmer (15-20 minutes): Stir in the rinsed and drained beans. Bring the chili to a gentle simmer, then reduce heat to medium-low and cook uncovered for 15-20 minutes, stirring occasionally. Taste after 10 minutes and adjust salt and pepper. If too thick, add a splash of water or broth; if too thin, simmer longer.
  5. Rest and serve (5 minutes): Remove the pot from heat and let the chili rest for about 5 minutes before serving. Ladle into bowls and add desired toppings.

Notes

For best flavor, bloom the chili powder with the turkey. Let the chili sit overnight for deeper flavor. If using fresh pumpkin, roast and puree a sugar pumpkin, then cook down to remove excess moisture. Avoid pumpkin pie filling. For a thicker chili, mash some beans against the pot. For a thinner chili, add water or broth.
