These easy antipasto skewers combine marinated mozzarella, salami, cherry tomatoes, and olives for a quick, crowd-pleasing party snack that’s flavorful and simple to prepare.

  • 8 oz (225 g) fresh mozzarella balls (bocconcini or ciliegine)
  • 2 tbsp extra virgin olive oil
  • 1 tsp dried oregano
  • 1 tsp fresh minced garlic (about 1 clove)
  • 1/2 tsp crushed red pepper flakes (optional)
  • Salt and freshly cracked black pepper, to taste
  • 12 slices of salami (preferably Genoa or spicy Italian)
  • 12 cherry tomatoes (ripe and firm)
  • 12 pitted green or black olives (Kalamata olives recommended)
  • Fresh basil leaves for garnish (optional)
  • Wooden or bamboo skewers (6-inch size)

Instructions

  1. In a medium mixing bowl, combine 2 tablespoons of extra virgin olive oil, 1 teaspoon dried oregano, minced garlic, crushed red pepper flakes (if using), and a pinch of salt and pepper. Whisk to blend well.
  2. Add the mozzarella balls and gently toss to coat evenly. Cover and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.
  3. Lay the salami slices flat on a clean surface. Fold each slice in half or thirds if large to fit nicely on the skewer.
  4. Take a wooden skewer and thread on one cherry tomato first to create a firm base.
  5. Next, fold a slice of salami and slide it on, followed by a marinated mozzarella ball, then add an olive.
  6. Repeat until all ingredients are used (about 12 skewers). If using, tuck a fresh basil leaf between the salami and mozzarella.
  7. Arrange the skewers on a platter and drizzle a little of the leftover marinade over them for extra zest.
  8. Serve immediately or cover and refrigerate for up to 2 hours before serving.

Notes

Marinate mozzarella for at least 30 minutes for best flavor. Use small-curd mozzarella to prevent falling apart. Soak wooden skewers in water for 10 minutes before grilling to prevent burning. Assemble skewers close to serving time to keep ingredients fresh. For dairy-free, substitute mozzarella with marinated tofu or vegan cheese. For vegetarian, swap salami with grilled or roasted vegetables.
