  • 1 cup old-fashioned rolled oats

  • 1/2 cup (1 stick) unsalted butter, cold and cut into small cubes
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Peel and slice 5-6 medium peaches into about 1/2-inch thick slices. Toss them gently in a large bowl with 1 tablespoon lemon juice, 1 tablespoon brown sugar, 1 teaspoon vanilla extract, and 1 tablespoon cornstarch.
  3. Transfer the peach mixture to your baking dish, spreading it out evenly.
  4. In a medium bowl, combine 1 cup rolled oats, 1/2 cup all-purpose flour, 3/4 cup packed brown sugar, 1 teaspoon ground cinnamon, and a pinch of salt. Toss until mixed.
  5. Add the cold, cubed butter to the dry ingredients. Using a pastry cutter, fork, or your fingertips, work the butter into the mixture until it resembles coarse crumbs with some pea-sized pieces. Do not overmix.
  6. Sprinkle the streusel evenly over the peaches in the baking dish.
  7. Bake for 35-40 minutes at 350°F (175°C), until the topping is golden brown and the peach juices are bubbling around the edges.
  8. Let it cool for at least 15 minutes before serving to allow the juices to thicken.

Notes

Use cold butter to keep the streusel crumbly and crisp. Peeling peaches is easier by scoring an X on the bottom, blanching in boiling water for 30 seconds, then plunging into ice water.
