This easy copycat Starbucks pumpkin cream cold foam cold brew is quick, simple, and tastes like you put way more effort into it than you actually did. It’s the perfect fall drink made in under 5 minutes with simple ingredients.

  • 1 ½ cups cold brew coffee (store-bought or homemade)
  • Ice cubes (enough to fill your glass)
  • ¼ cup heavy cream (cold)
  • 2 tablespoons pumpkin puree (100% pure pumpkin, not pumpkin pie filling)
  • 1 tablespoon maple syrup (or honey, simple syrup)
  • ½ teaspoon vanilla extract
  • ¼ teaspoon pumpkin pie spice (or a pinch each of cinnamon, nutmeg, ginger, and clove)
  • Pinch of salt

Instructions

  1. Fill your glass with ice. Use large ice cubes if possible to slow melting.
  2. Pour in the cold brew, filling the glass about ¾ full. Leave room for the foam.
  3. In a small bowl or wide-mouthed jar, combine heavy cream, pumpkin puree, maple syrup, vanilla extract, pumpkin pie spice, and a pinch of salt. Stir with a spoon to break up the pumpkin puree.
  4. Froth the mixture using a milk frother for 20-30 seconds until thick and doubled in volume. Alternatively, use a French press (pump 30 seconds) or a jar with a tight lid (shake vigorously for 1 minute).
  5. Gently pour the foam over the cold brew using a spoon to layer it on top. Pour over the back of the spoon to maintain separation.
  6. Sprinkle extra pumpkin pie spice or cinnamon on top. Optionally, add a drizzle of caramel or a few pumpkin seeds.
  7. Serve immediately while the foam is cold and thick.

Notes

Use cold ingredients for best foam. Don’t skip the salt—it balances sweetness. Mix pumpkin puree first to avoid clumps. For dairy-free, use full-fat coconut cream. For a hot version, use hot coffee instead of cold brew. Store pumpkin cream foam in the fridge for up to 2 days; re-froth before using.
