  • 1/4 cup (25 grams) shredded carrot (optional, for rolling)
  • Fresh chives, finely chopped, for garnish

Instructions

  1. Soften the cream cheese by letting it sit at room temperature for about 15 minutes or microwave for 10 seconds.
  2. In a mixing bowl, beat the softened cream cheese with shredded sharp cheddar using a hand mixer or stand mixer on medium speed until creamy and well combined, about 2 minutes.
  3. Stir in finely chopped green onions, chopped fresh parsley, garlic powder, Worcestershire sauce, salt, and pepper until evenly distributed.
  4. Transfer the cheese mixture onto a large piece of plastic wrap or parchment paper. Shape it into a rough carrot form, tapering one end to a pointed tip and thicker at the opposite end. Wrap tightly and refrigerate for at least 1 hour to firm up.
  5. While chilling, mix chopped pecans or walnuts with shredded carrot in a shallow bowl.
  6. Remove the chilled cheese ball from the fridge and unwrap it carefully. Roll it gently in the nut and carrot mixture, pressing lightly so bits stick well.
  7. Finely chop fresh chives and sprinkle generously over the thick end of the cheese ball to resemble carrot greens.
  8. Return the cheese ball to the fridge for another 30 minutes to let flavors meld and coating set.
