A comforting and indulgent breakfast casserole featuring day-old bread soaked overnight in a creamy custard, baked to golden perfection. Perfect for busy mornings or brunch gatherings.

Ingredients

Scale
  • 8 cups day-old bread, cubed (thick-cut brioche or challah recommended)
  • 6 large eggs, room temperature
  • 2 cups whole milk (480 ml)
  • ½ cup granulated sugar (100 g)
  • 2 teaspoons vanilla extract
  • 1 tablespoon ground cinnamon
  • ½ teaspoon salt
  • 2 tablespoons melted butter
  • Optional toppings: powdered sugar, maple syrup, fresh berries, chopped nuts

Instructions

  1. Cube the bread into 1-inch pieces.
  2. In a large bowl, whisk together eggs, whole milk, sugar, vanilla extract, cinnamon, salt, and melted butter until smooth.
  3. Gently fold bread cubes into the custard mixture, ensuring all pieces are coated. Let sit for 5 minutes, then fold again.
  4. Pour the soaked bread and custard into a greased 9×13-inch baking dish, spreading evenly. Cover tightly with plastic wrap or foil.
  5. Refrigerate overnight or for at least 8 hours.
  6. Preheat oven to 350°F (175°C). Remove plastic wrap and bake uncovered for 45-55 minutes until golden and custard is set.
  7. Let bake rest for 10 minutes before serving.

Notes

Use day-old or slightly stale bread for best texture; fresh bread may become soggy. Watch baking time closely to avoid overbaking. Optional toppings like maple syrup or fresh berries enhance flavor. For dairy-free, substitute milk and butter with plant-based alternatives. For gluten-free, use certified gluten-free bread.
