A quick and easy lunch wrap featuring double-coated crispy chicken strips, fresh Caesar salad, and a creamy dressing, perfect for bento boxes and on-the-go meals.

  • 2 boneless, skinless chicken breasts (about 12 oz / 340 g), sliced into strips
  • 1 cup all-purpose flour (120 g)
  • 2 large eggs, beaten, room temperature
  • 1 cup panko breadcrumbs (100 g)
  • 1/2 cup grated Parmesan cheese (50 g)
  • Salt and pepper, to taste
  • Olive oil or vegetable oil for frying (or cooking spray for baking)
  • 2 cups romaine lettuce, chopped (about 100 g)
  • 1/4 cup Caesar dressing (60 ml)
  • 1/4 cup croutons, crushed (about 15 g)
  • 2 tablespoons grated Parmesan cheese (optional)
  • 4 large flour tortillas (10-inch / 25 cm)

Instructions

  1. Pat the chicken strips dry with paper towels. Season lightly with salt and pepper.
  2. Set up dredging stations: place flour in one shallow bowl, beaten eggs in a second bowl, and mix panko breadcrumbs with grated Parmesan cheese in a third bowl.
  3. Dredge each chicken strip in flour, shaking off excess. Dip into beaten eggs, then coat thoroughly with the panko-Parmesan mixture, pressing gently to adhere.
  4. Heat 1/4 inch of oil in a skillet over medium heat until shimmering but not smoking (about 350°F). Fry chicken strips 3-4 minutes per side until golden brown and cooked through. Drain on paper towels. Alternatively, bake on a wire rack at 425°F for 15-20 minutes, flipping halfway.
  5. In a bowl, toss chopped romaine lettuce with Caesar dressing until evenly coated. Add crushed croutons and extra Parmesan cheese if desired.
  6. Warm tortillas slightly to make them pliable. Lay one flat, place a handful of dressed romaine in the center, add 3-4 crispy chicken strips on top, then wrap tightly, folding in the sides first.
  7. Pack wraps in a bento box or lunch container. Slice in half if desired. Best enjoyed within a few hours but hold up well until lunchtime.

Notes

Pat chicken dry before coating to ensure crispiness. Maintain oil temperature around 350°F to avoid greasy or burnt coating. Toss lettuce lightly with dressing just before assembling to prevent sogginess. Warm tortillas briefly (about 10 seconds in microwave) to prevent cracking when folding. For baking, use a wire rack on a baking sheet to keep chicken crispy. Store cooked chicken and salad separately if prepping ahead to maintain texture.
