Easy Crispy Fall Harvest Salad with Apple, Pecans & Goat Cheese

A quick and easy fall salad featuring crispy roasted chickpeas, crisp apples, creamy goat cheese, and a tangy maple-Dijon dressing. Perfect for weeknights or holiday gatherings.

  • 5 oz (about 5 cups) mixed greens (baby spinach, arugula, romaine)
  • 2 medium apples (Honeycrisp or Fuji), cored and thinly sliced
  • 4 oz goat cheese, crumbled
  • 1/2 cup pecans, roughly chopped
  • 1/3 cup dried cranberries
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 3 tablespoons pure maple syrup
  • 2 tablespoons Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1/4 cup olive oil

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Drain and rinse chickpeas. Pat completely dry with a clean kitchen towel.
  3. Transfer chickpeas to the baking sheet. Drizzle with 1 tablespoon olive oil, smoked paprika, garlic powder, salt, and pepper. Toss to coat and spread in a single layer.
  4. Roast chickpeas for 20-25 minutes, shaking the pan halfway through, until golden and crispy.
  5. While chickpeas roast, toast pecans in a dry skillet over medium heat for 3-5 minutes until fragrant. Transfer to a plate to cool.
  6. In a small bowl or mason jar, combine maple syrup, Dijon mustard, apple cider vinegar, 1/4 cup olive oil, salt, and pepper. Whisk or shake until emulsified.
  7. Core and thinly slice apples (about 1/4 inch thick).
  8. In a large bowl, combine mixed greens, sliced apples, toasted pecans, dried cranberries, and roasted chickpeas (cooled slightly). Crumble goat cheese on top.
  9. Drizzle with half the dressing and toss gently. Add more dressing as needed.
  10. Serve immediately, topped with extra chickpeas and flaky sea salt if desired.

Notes

Dry chickpeas thoroughly for maximum crispiness. Dress salad just before serving to keep greens and chickpeas crunchy. Toast pecans fresh for best flavor. For vegan version, omit goat cheese and add diced avocado or vegan feta.
