  • 1 medium head green cabbage (about 4 cups shredded)
  • 1 small yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 3 tablespoons soy sauce (low-sodium or tamari/coconut aminos for gluten-free)
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 2 tablespoons olive oil or avocado oil
  • 2 green onions, sliced (optional)

Instructions

  1. Finely shred the cabbage (about 4 cups). Chop the onion and mince the garlic. Set aside.
  2. Heat a large skillet or wok over medium-high heat and add 1 tablespoon of olive or avocado oil. Warm until shimmering, about 1 minute.
  3. Add the ground turkey to the hot pan, breaking it up with a spatula. Season lightly with salt and pepper. Cook for 6-8 minutes until browned and cooked through. Drain excess liquid if needed.
  4. Push the turkey to one side of the pan. Add the remaining oil, then the chopped onion and garlic. Cook for 2-3 minutes until fragrant and softened, stirring frequently.
  5. Add the shredded cabbage to the pan. Sprinkle with red pepper flakes if using. Stir well to combine with turkey and aromatics.
  6. Pour in soy sauce, rice vinegar, and sesame oil. Stir and cook for 5-7 minutes, stirring occasionally, until cabbage is tender but still crisp and starting to brown.
  7. Taste and adjust seasoning with salt and pepper. Remove from heat and sprinkle sliced green onions on top.
  8. Serve immediately hot.

To keep cabbage crispy, avoid overcrowding the pan and drain shredded cabbage before cooking. Use 93% lean ground turkey for best moisture balance. For gluten-free, substitute soy sauce with tamari or coconut aminos. Reheat leftovers gently in a skillet to preserve crispiness.
