These easy crockpot chicken meal prep bowls for fall are made with tender chicken, sweet potatoes, black beans, and corn in a smoky salsa sauce. Perfect for busy weeks, they require just 15 minutes of prep and deliver comforting, healthy meals all week long.

  • 2 pounds (900g) boneless, skinless chicken breasts or thighs
  • 2 medium sweet potatoes (about 3 cups diced)
  • 1 can (15 ounces or 425g) black beans, drained and rinsed
  • 1 cup frozen or canned corn
  • 1 cup salsa (medium or mild)
  • ½ cup (120ml) low-sodium chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • Salt and black pepper to taste
  • Fresh cilantro for garnish (optional)
  • Lime wedges for serving
  • 1 cup dry rice (for serving, makes about 3 cups cooked)

Instructions

  1. Prep your ingredients (15 minutes): Dice sweet potatoes into ½-inch cubes. Drain and rinse black beans. Measure frozen corn. If using fresh onion, dice it.
  2. Layer everything in the crockpot (5 minutes): Place chicken in the bottom. Add sweet potatoes, black beans, and corn on top. Pour salsa and chicken broth over everything. Sprinkle cumin, chili powder, garlic powder, smoked paprika, salt, and pepper on top. Do not stir.
  3. Cook on low for 6-8 hours or on high for 3-4 hours. Chicken is done when it shreds easily with a fork and sweet potatoes are tender.
  4. Shred the chicken (5 minutes): Remove chicken to a cutting board and shred with two forks. Alternatively, shred directly in the crockpot using a potato masher or hand mixer, being careful not to mash the sweet potatoes.
  5. Combine and adjust seasoning (2 minutes): Return shredded chicken to the crockpot and stir. Taste and adjust salt, heat, or lime juice as needed.
  6. Cook rice according to package directions about 30 minutes before the chicken is done. For 4 servings, use 1 cup dry rice and 2 cups water or broth.
  7. Assemble meal prep bowls (10 minutes): Divide cooked rice among containers. Top with chicken and vegetable mixture. Add fresh garnishes just before eating. Let bowls cool completely before sealing lids.

Notes

Don’t lift the lid during cooking. For best results, use chicken thighs as they stay juicier when reheated. The flavors improve after a day or two in the fridge. For freezing, store the chicken mixture without rice.
