  • 2 large eggs, at room temperature
  • ½ cup (120ml) vegetable oil
  • 1 teaspoon vanilla extract
  • ¼ cup (60ml) milk (dairy or plant-based)
  • 1 cup (175g) semi-sweet chocolate chips, divided

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin pan with paper liners.
  2. In a large mixing bowl, whisk together the all-purpose flour, unsweetened cocoa powder, granulated sugar, light brown sugar, baking soda, baking powder, and salt until well combined.
  3. Make a well in the center of the dry ingredients. Add the pumpkin puree, room temperature eggs, vegetable oil, vanilla extract, and milk. Stir with a whisk until just combined; do not overmix.
  4. Fold in ¾ cup of the chocolate chips using a rubber spatula, folding gently until evenly distributed.
  5. Divide the batter evenly among the 12 muffin cups, filling each about ¾ full.
  6. Sprinkle the remaining ¼ cup of chocolate chips over the tops of the muffins.
