Ingredients

Scale
  • 1 lb (450g) ground beef or ground turkey (lean)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning mix (or homemade blend: chili powder, cumin, paprika, oregano, salt, and pepper)
  • ½ cup (120ml) water
  • 10 individual snack-sized bags of Fritos, Doritos, or your favorite corn chips
  • 1 ½ cups (150g) shredded cheddar cheese
  • 1 cup (240ml) salsa
  • ½ cup (120g) sour cream or Greek yogurt
  • 1 cup (150g) shredded lettuce
  • 1 medium tomato, diced
  • 1 small can (4 oz / 113g) sliced black olives (optional)
  • Fresh cilantro leaves for garnish (optional)

Instructions

  1. Heat your skillet over medium-high heat. Toss in the chopped onion and garlic, sautéing for about 2-3 minutes until softened and fragrant.
  2. Add the ground beef (or turkey) to the skillet. Break it up with your spoon and cook for 6-8 minutes until browned all over and no pink remains.
  3. Sprinkle the taco seasoning evenly over the meat. Pour in ½ cup (120ml) water and stir well to combine. Let it simmer gently for 5 minutes, stirring occasionally, until the sauce thickens and coats the meat.
  4. While the meat simmers, chop your tomatoes, shred lettuce, and get your cheese, sour cream, salsa, and olives ready in small bowls.
  5. Carefully open each individual chip bag by cutting off the top or tearing along the perforation. Spoon about ⅓ cup (75g) of the meat mixture into each bag.
  6. Add a handful of shredded cheddar cheese on top of the meat, followed by a spoonful of salsa and a dollop of sour cream or Greek yogurt.
  7. Finish with shredded lettuce, diced tomatoes, and olives (if using). Garnish with fresh cilantro leaves.
  8. Serve immediately with a sturdy fork or spoon.

Notes

Do not overfill the chip bags to avoid spills. Assemble just before serving to keep chips crisp. For vegetarian versions, substitute meat with cooked lentils or black beans. Use gluten-free corn chips to keep recipe gluten-free. Add jalapeños or hot sauce for a spicy kick. Fresh cilantro or a squeeze of lime juice enhances flavor.
