  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or homemade blend: chili powder, cumin, paprika, oregano, salt, pepper)
  • ½ cup water
  • Individual bags of sturdy tortilla chips or Fritos (about 2 oz per bag)
  • 1 cup shredded cheddar or Mexican blend cheese
  • ½ cup diced tomatoes (fresh or canned)
  • ½ cup shredded lettuce
  • ¼ cup sliced black olives (optional)
  • ½ cup sour cream or plain Greek yogurt
  • ¼ cup salsa or pico de gallo
  • Fresh cilantro leaves for garnish (optional)

Instructions

  1. Heat a large skillet over medium-high heat. Add the ground beef and chopped onion. Cook for about 5–7 minutes, breaking the meat apart with your spoon until browned and no longer pink.
  2. Stir in the minced garlic and cook for 30 seconds until fragrant. Sprinkle the taco seasoning evenly over the meat mixture. Pour in ½ cup water and stir well to combine.
  3. Reduce heat to medium-low. Let the mixture simmer for 5–8 minutes, stirring occasionally, until the sauce thickens and coats the meat nicely. Add more water if needed. Taste and adjust seasoning if needed.
  4. While the meat simmers, chop tomatoes, shred lettuce, slice olives, and get cheese and sour cream ready. Keep the toppings in separate bowls for easy assembly.
  5. Open each individual chip bag and gently crush the chips a bit to create space. Spoon about ⅓ to ½ cup of the warm taco meat into each bag.
  6. Sprinkle shredded cheese over the meat so it melts slightly from the heat, then layer on diced tomatoes, lettuce, olives if using, a dollop of sour cream, and a spoonful of salsa or pico de gallo. Garnish with cilantro leaves if desired.
  7. Serve immediately, allowing guests to eat directly from the bag or with a fork.

Use sturdy chips like Fritos to prevent sogginess. Assemble tacos just before serving to keep chips crunchy. Taco meat can be cooked ahead and kept warm in a slow cooker. Adjust seasoning boldly for best flavor. Vegetarian and dairy-free adaptations are possible.
