An indulgent yet effortless breakfast casserole made with refrigerated cinnamon rolls soaked in a cinnamon-spiced custard and topped with a tangy cream cheese glaze. Perfect for busy mornings or lazy weekends.

  • One 16 oz (450 g) tube refrigerated cinnamon rolls, classic or with icing removed
  • 3 large eggs, room temperature
  • 1 cup (240 ml) milk, whole or 2% (or half-and-half for creamier texture)
  • ½ cup (100 g) packed brown sugar
  • 1 tbsp (8 g) ground cinnamon
  • 1 tsp (5 ml) pure vanilla extract
  • 4 tbsp (57 g) melted butter
  • Cream cheese glaze:
  • 4 oz (115 g) cream cheese, softened
  • ½ cup (60 g) powdered sugar, sifted
  • 1 tsp (5 ml) vanilla extract
  • 23 tbsp (3045 ml) milk or cream

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9 inch baking dish with butter or non-stick spray.
  2. Cut each cinnamon roll into quarters and arrange them evenly in the baking dish, leaving a little breathing room.
  3. In a medium bowl, whisk together eggs, milk, brown sugar, cinnamon, vanilla extract, and melted butter until smooth.
  4. Pour the custard mixture evenly over the cinnamon roll pieces, pressing gently so they soak up the custard.
  5. Let the dish rest for about 10 minutes to allow the rolls to absorb the custard.
  6. Bake for 30-35 minutes until the top is golden and custard is set (toothpick should come out mostly clean with a few moist crumbs).
  7. While baking, prepare the cream cheese glaze by beating cream cheese, powdered sugar, vanilla extract, and milk or cream until smooth and pourable.
  8. Once the casserole has cooled for about 10 minutes, drizzle the cream cheese glaze generously over the top and serve warm.

Notes

If casserole browns too fast, tent loosely with foil halfway through baking. Do not skip resting time before baking for best gooey texture. Use room temperature eggs and milk for smooth custard. Let casserole cool before glazing to prevent glaze from melting off. Variations include adding fruit, nuts, or spices. Dairy-free and vegan adaptations possible with substitutions.
