  • 3 medium zucchinis, sliced lengthwise into 1/4-inch thick strips
  • 3 cloves garlic, finely minced or grated
  • 3 tablespoons extra virgin olive oil
  • 1/2 teaspoon sea salt, or to taste
  • 1/4 teaspoon freshly ground black pepper (optional)
  • 1 teaspoon freshly squeezed lemon juice (optional)

Instructions

  1. Rinse and dry the zucchinis thoroughly to avoid steaming on the grill. Slice them lengthwise into approximately 1/4-inch thick strips.
  2. In a mixing bowl, combine 3 tablespoons of extra virgin olive oil with the minced garlic, 1/2 teaspoon sea salt, and optional 1/4 teaspoon black pepper. Add 1 teaspoon fresh lemon juice if using. Stir well and let sit for 5 minutes if possible.
  3. Add the zucchini slices to the bowl and gently toss to coat each piece with the garlic olive oil. Let marinate for 10 minutes if possible.
  4. Preheat the grill to medium-high heat (about 400°F). Brush the grates lightly with oil to prevent sticking. If using a grill pan, heat it on medium-high for about 5 minutes.
  5. Place the zucchini strips on the grill perpendicular to the grates. Cook for 3-4 minutes per side, flipping once, until tender with charred edges.
  6. Remove from the grill and arrange on a serving plate. Drizzle any leftover garlic olive oil over the top. Taste and adjust seasoning with more salt if needed.

Notes

Use avocado oil as a substitute for olive oil if preferred. Sprinkle grated Parmesan after grilling for a dairy twist. Keep grill grates clean and lightly oiled to prevent sticking. Avoid overcrowding the grill for even cooking. Watch closely to prevent sogginess. Can be roasted in oven at 425°F for 15-20 minutes as an alternative.
