  • 1/4 teaspoon salt
  • 1/8 teaspoon ground cinnamon

  • 1/2 cup semisweet chocolate chips
  • 1 teaspoon coconut oil or vegetable shortening

Instructions

  1. Combine the dry ingredients: In a large microwave-safe bowl, toss together pretzel twists, crispy rice cereal squares, mini pretzel sticks, candy corn, candy pumpkins, and peanuts (if using). Set aside.
  2. Make the coating: In a separate small microwave-safe bowl, melt the butter in the microwave for about 45 seconds on high. Stir in the brown sugar and corn syrup until smooth. Microwave for another 30 seconds, then stir again until bubbling and well combined.
  3. Add the flavorings: Stir in the vanilla extract, salt, and cinnamon. Quickly whisk in the baking soda until the mixture foams and lightens in color.
  4. Pour and toss: Immediately pour the hot coating over the dry ingredients. Fold gently with a spatula until every piece is lightly coated, about 2 minutes.
  5. Spread to cool: Line a large baking sheet with parchment paper. Pour the coated mixture onto the sheet and spread into an even layer. Let cool completely at room temperature, about 20 to 30 minutes.
  6. Make the chocolate drizzle: Place chocolate chips and coconut oil in a small microwave-safe bowl. Microwave in 20-second bursts, stirring after each, until smooth and glossy (about 60 to 90 seconds total).
  7. Drizzle and set: Once the snack mix has cooled completely, use a fork to drizzle the melted chocolate over the top. Let the chocolate set for about 15 minutes at room temperature, or refrigerate for 10 minutes if in a hurry.
  8. Break apart and serve: Once the chocolate is firm, break the snack mix into bite-sized pieces. Transfer to a serving bowl and serve.

Notes

For a crunchier texture, bake the coated mix at 250°F for 45 minutes, stirring every 15 minutes, then cool before adding chocolate. Add candy corn and pumpkins after cooling if you prefer them firmer. The mix tastes even better the next day. Store in an airtight container at room temperature for up to 5 days.
