  • 1 cup water (240ml)
  • 2 tablespoons pure pumpkin puree (canned, not pie filling)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon ground ginger
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Combine 1 cup granulated sugar and 1 cup water in a small saucepan. Place over medium heat and stir gently until sugar dissolves completely, about 3-5 minutes.
  2. Whisk in 2 tablespoons pumpkin puree, 1 teaspoon ground cinnamon, 1/2 teaspoon ground nutmeg, 1/4 teaspoon ground cloves, and 1/2 teaspoon ground ginger. Stir well to combine.
  3. Reduce heat to low and let the mixture simmer gently for 7-10 minutes, stirring occasionally to prevent burning.
  4. Remove from heat and stir in 1 teaspoon vanilla extract and a pinch of salt.
  5. Optional: Strain the syrup through a fine mesh strainer or cheesecloth into a clean jar for a smoother syrup.
  6. Let the syrup cool to room temperature, then seal and refrigerate. Shake well before each use.

Notes

If syrup thickens too much after refrigeration, warm slightly or stir in a splash of hot water. Use pure pumpkin puree, not pumpkin pie filling. Adjust sweetness by reducing sugar and adding extra water if desired. Store refrigerated up to 2 weeks.
