Instructions

  1. Preheat your oven to 400°F (200°C). Line a rimmed baking sheet (about 12×17 inches) with parchment paper or a silicone baking mat.
  2. In a mixing bowl, whisk together honey, minced garlic, soy sauce, and grated ginger until smooth. Add a splash of water if the glaze is too thick.
  3. Toss the mixed vegetables with olive oil, salt, pepper, and red pepper flakes if using. Spread evenly on the lined baking sheet, leaving space in the center for the salmon.
  4. Place the salmon fillets skin-side down (if skin-on) in the center of the pan. Pat dry the salmon to help the glaze stick.
