Easy Lighter Spiderweb Spinach Artichoke Dip Recipe

A lighter, healthier twist on classic spinach artichoke dip with a fun spiderweb design, perfect for Halloween or any fall gathering. This creamy, cheesy dip comes together in about 30 minutes and uses neufchâtel cheese to cut fat without sacrificing flavor.

  • 8 oz Neufchâtel cheese, softened
  • 1/2 cup plain Greek yogurt
  • 1/4 cup light mayonnaise
  • 10 oz frozen chopped spinach, thawed and squeezed dry
  • 14 oz canned artichoke hearts, drained and chopped
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 cup shredded Parmesan cheese
  • 3 cloves garlic, minced
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup sour cream (for spiderweb design)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Thaw frozen spinach in microwave for 2-3 minutes, then squeeze dry in a clean kitchen towel to remove as much water as possible.
  3. Soften Neufchâtel cheese (microwave in 10-second bursts if needed).
  4. In a medium bowl, combine softened Neufchâtel, Greek yogurt, and light mayonnaise until smooth.
  5. Stir in minced garlic, onion powder, salt, pepper, and red pepper flakes (if using).
  6. Fold in squeezed-dry spinach, chopped artichoke hearts, 3/4 cup mozzarella, and all Parmesan cheese until evenly combined.
  7. Transfer mixture to a greased 8×8 baking dish and spread into an even layer.
  8. Bake for 15 minutes until hot and bubbly around edges.
  9. While dip bakes, prepare sour cream topping by stirring sour cream until smooth and placing in a piping bag or zip-top bag with a small corner snipped off.
  10. Remove dip from oven and let cool for 2 minutes.
  11. Pipe sour cream in a spiral pattern on top of dip, starting from center and working outward.
  12. Use a toothpick or skewer to drag lines from center outward through the sour cream rings to create a spiderweb pattern. Wipe toothpick clean between each drag.
  13. Sprinkle remaining 1/4 cup mozzarella around edges of dip, avoiding spiderweb lines.
  14. Return to oven and bake 5 more minutes until mozzarella is melted and lightly golden.
  15. Let rest for 5 minutes before serving.

Notes

Squeeze spinach very dry to prevent watery dip. Let dip cool 2 minutes before adding spiderweb design. For best results, use full-fat sour cream for the web. Dip can be assembled (without spiderweb) up to 24 hours ahead and refrigerated. Reheat in oven at 350°F for 10-15 minutes.
