Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Grate the zucchini using a box grater. Place the shreds in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible.
  3. In a large mixing bowl, whisk together the flour, sugar, baking soda, baking powder, salt, cinnamon, and nutmeg until well blended.
  4. Add the eggs, vegetable oil, and vanilla extract to the dry ingredients. Stir gently with a wooden spoon until just combined; do not overmix.
  5. Fold in the squeezed zucchini and any optional add-ins like nuts or chocolate chips until evenly distributed.
  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  7. Bake for 50-60 minutes, starting to check at 50 minutes by inserting a toothpick into the center. If it comes out clean or with a few moist crumbs, the bread is done.
  8. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Do not overmix the batter to avoid dense bread. Squeeze zucchini well to prevent sogginess. Use room temperature eggs for better mixing. Bake in the center of the oven for even cooking. Check doneness with a toothpick. Let bread cool completely before slicing to avoid crumbling.
