  • 1/4 cup (50g) granulated sugar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon cornstarch

  • 3/4 cup (90g) all-purpose flour
  • 1/4 cup (50g) granulated sugar
  • 1/4 cup (50g) brown sugar, packed
  • 1/2 cup (50g) sliced almonds
  • 1/2 teaspoon salt
  • 1/2 cup (115g) unsalted butter, cold and diced

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine sliced nectarines, blueberries, granulated sugar, lemon juice, cornstarch, and cinnamon (if using). Toss gently until fruit is evenly coated. Let sit for 10 minutes.
  3. In a large bowl, whisk together flour, granulated sugar, brown sugar, sliced almonds, and salt. Cut cold butter into dry ingredients using a pastry cutter or fingertips until mixture resembles coarse crumbs with some pea-sized pieces.
  4. Transfer fruit mixture into a 9-inch baking dish, spreading evenly. Sprinkle almond crumble topping evenly over fruit without pressing down.
  5. Bake for 35-40 minutes until topping is golden brown and fruit is bubbling. If topping browns too quickly, cover loosely with foil halfway through baking.
  6. Let crumble cool for 10-15 minutes before serving to thicken and allow flavors to settle.
