Easy No-Bake Patriotic Cheesecake Cups

Light, creamy, and festive no-bake cheesecake cups layered with fresh red, white, and blue berries, perfect for 4th of July celebrations and summer gatherings.

Ingredients

  • 8 ounces softened full-fat cream cheese
  • 3/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup cold heavy whipping cream
  • Graham cracker crumbs (store-bought or homemade)
  • Fresh strawberries, hulled and sliced
  • Fresh blueberries
  • Fresh raspberries (optional)

Instructions

  1. Wash and dry the fresh strawberries, blueberries, and raspberries. Hull and slice the strawberries into thin pieces. Set all berries aside separately.
  2. In a medium bowl, beat the softened cream cheese until smooth and creamy. Add powdered sugar and vanilla extract. Mix until fully combined and silky.
  3. In a chilled large bowl, pour cold heavy whipping cream. Using an electric mixer, whip on medium-high speed until stiff peaks form, being careful not to overwhip.
  4. Gently fold the cream cheese mixture into the whipped cream in three additions using a spatula, keeping the mixture light and airy.
  5. Start with about 2 tablespoons of graham cracker crumbs at the bottom of each cup. Add a layer of cheesecake filling (about 1/4 cup). Layer with sliced strawberries and blueberries. Repeat layers until cups are nearly full, finishing with berries on top.
  6. Refrigerate the assembled cheesecake cups for at least one hour before serving to let flavors meld and filling set.

Notes

Chill the bowl and beaters before whipping cream for fluffier peaks. Fold cream cheese mixture gently into whipped cream to keep texture airy. Do not pack graham cracker crumbs tightly to maintain crunch. Assemble the night before if desired, but add fresh berries just before serving to keep them vibrant.
