Ingredients

Scale
  • 8 oz (225 g) cream cheese, softened
  • 1/2 cup (120 ml) heavy cream or whipping cream (use dairy-free coconut cream if preferred)
  • 1/3 cup (40 g) powdered sugar (adjust to taste)
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 1/2 cups (150 g) graham cracker crumbs (about 10 sheets, crushed)
  • 1/4 cup (55 g) unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 2 cups (300 g) fresh peaches, diced
  • 1 tablespoon honey or maple syrup (optional)
  • 1 teaspoon lemon zest

Instructions

  1. Prepare the Graham Cracker Crumble: Place graham crackers in a food processor and pulse until fine crumbs form. Alternatively, put them in a sealed plastic bag and crush with a rolling pin. Mix crumbs with melted butter and sugar until well combined. Set aside. (About 5 minutes)
  2. Make the Peach Topping: In a small bowl, combine diced peaches with honey and lemon zest. Stir gently and let sit for 10 minutes to macerate.
  3. Whip the Cream Cheese Filling: In a large bowl, beat softened cream cheese with powdered sugar and lemon juice until smooth and creamy. In a separate bowl, whip heavy cream until soft peaks form. Gently fold whipped cream into the cream cheese mixture along with vanilla extract, being careful not to deflate the airiness. (Total about 10 minutes)
  4. Assemble the Cups: Spoon 2 tablespoons of the graham cracker crumble into the bottom of each serving cup. Add a generous layer (about 1/3 cup or 80 ml) of the cheesecake filling on top. Finish with a spoonful of the peach topping. Repeat layers if your cups are tall enough. (Assembly takes about 10 minutes)
  5. Chill Before Serving: Refrigerate the assembled cups for at least 2 hours to allow flavors to meld and the filling to firm up slightly. If in a hurry, 1 hour works too.
  6. Serve and Enjoy: Optionally sprinkle a little extra graham cracker crumble or fresh mint leaves for garnish.

Notes

Softening cream cheese is key for smooth filling; chill bowl and whisk for better whipped cream volume; fine graham cracker crumbs bind better; chill assembled cups for best texture; can substitute canned peaches or gluten-free crackers; avoid overmixing whipped cream to prevent butteriness.
