  • 2 tablespoons chia seeds or flax seeds (optional)
  • ½ cup protein powder (vanilla or unflavored)
  • A pinch of salt

Instructions

  1. If you prefer a smooth texture, pulse half the rolled oats in a food processor for about 10 seconds until coarsely ground but not powdery. Combine with the remaining whole oats in a mixing bowl. (5 minutes)
  2. Add the peanut butter, honey or maple syrup, and vanilla extract to the oats. Stir well with a spatula until everything starts to come together. It will be sticky but manageable. (3 minutes)
  3. Sprinkle in the protein powder, chia or flax seeds if using, and a pinch of salt. Mix thoroughly ensuring no dry pockets remain. The mixture should hold together when pressed. (3 minutes)
  4. Gently fold in the dark chocolate chips, saving a few to press on top of each ball for a pretty finish. (2 minutes)
  5. Scoop about 1 tablespoon (15g) of mixture and roll between your palms into firm balls. Place on a baking sheet or plate lined with parchment paper. If the mixture sticks too much, wet your hands slightly or chill for 10 minutes before rolling. (7 minutes)
  6. Pop the tray in the fridge for at least 30 minutes to firm up. This step helps the balls hold their shape and makes them easier to grab later. (30 minutes)
