  • ½ cup (1 stick) unsalted butter, melted
  • ¾ cup granulated sugar
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup chopped walnuts

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan with non-stick spray or line with parchment paper, leaving overhang on the long sides.
  2. In a large mixing bowl, mash the bananas with a fork or potato masher until mostly smooth (a few lumps are fine).
  3. Add the melted butter, sugar, egg, and vanilla extract to the bananas. Stir until well combined.
  4. Sprinkle the flour, baking soda, and salt over the wet mixture. Stir gently until just combined; do not overmix.
  5. Fold in the chopped walnuts with a few gentle strokes.
  6. Pour the batter into the prepared loaf pan and spread evenly. Tap the pan gently on the counter to release air bubbles.
  7. Bake for 55 to 65 minutes, until a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly, tent with foil after 40 minutes.
  8. Cool in the pan on a wire rack for 15 minutes, then lift the bread out using the parchment paper and cool completely on the rack before slicing.

Notes

Use very ripe bananas with brown spots for best sweetness and moisture. Do not overmix the batter to avoid a tough loaf. Let the bread cool completely before slicing to prevent crumbling. The flavor improves after a day.
