Instructions

  1. Prepare your ingredients (5-7 minutes): Slice the bell peppers into thin strips about 1/2 inch wide. Peel and slice the onion thinly. Mince the garlic cloves finely.
  2. Heat the skillet (2 minutes): Place your skillet over medium heat and add 1 tablespoon of olive oil. Let it warm until it shimmers but doesn’t smoke.
  3. Cook the sausage (8-10 minutes): Add the sausage links whole to the pan. Brown them slowly, turning every few minutes with tongs to get a nice crust on all sides. Cook about 75% through.
  4. Remove sausage and add vegetables (2 minutes): Transfer the sausage to a plate. Add remaining tablespoon of olive oil to the pan and toss in onions and peppers. Season lightly with salt and pepper. Sauté for about 5 minutes until they start to soften but still have a bit of crunch.
  5. Add garlic and spices (1 minute): Stir in minced garlic, oregano, and red pepper flakes (if using). Cook for another minute until fragrant.
  6. Return sausage to the pan (5 minutes): Nestle browned sausage links back into the peppers and onions. Cover the pan, reduce heat to medium-low, and cook together for about 5 minutes.
  7. Final touches and serve (2 minutes): Remove lid, check sausage is cooked through (160°F internal temp). Adjust seasoning if needed. Sprinkle fresh parsley on top before serving.

Notes

Do not rush browning the sausage to lock in juices. Keep peppers slightly crisp by sautéing until tender but still with bite. Add garlic last to avoid burning. Cover pan to finish cooking and meld flavors. Avoid overcrowding the pan; cook in batches if needed. For a lighter version, swap Italian sausage for chicken sausage. Leftovers reheat best gently in a skillet with a splash of water or broth.
