Easy Overnight Everything Bagel Breakfast Casserole

  • 4 large everything bagels, cut into 1-inch cubes (day-old bagels work best)
  • 8 large eggs, beaten (room temperature)
  • 2 cups whole milk (480 ml; can substitute almond or oat milk for dairy-free)
  • 1 ½ cups sharp cheddar cheese, shredded (about 170 g)
  • 6 strips cooked bacon, crumbled (optional)
  • 3 green onions, sliced thin
  • 2 tablespoons everything bagel seasoning plus extra for topping
  • ½ teaspoon salt (adjust to taste)
  • ¼ teaspoon freshly ground black pepper
  • 1 teaspoon Dijon mustard
  • Unsalted butter for greasing the baking dish

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish with unsalted butter.
  2. Cut four large everything bagels into roughly 1-inch cubes. Day-old bagels are best for soaking up the custard.
  3. Cook 6 strips of bacon until crisp, then crumble into bite-sized pieces. Set aside.
  4. In a medium bowl, whisk together 8 large eggs, 2 cups whole milk, 1 teaspoon Dijon mustard, ½ teaspoon salt, and ¼ teaspoon freshly ground black pepper until fully combined and slightly frothy.
  5. Spread half the bagel cubes evenly in the greased baking dish. Sprinkle half the shredded sharp cheddar cheese, half the crumbled bacon, and half the sliced green onions over the bagels.
  6. Repeat layering with the remaining bagel cubes, cheese, bacon, and green onions.
  7. Pour the custard evenly over the layered ingredients. Gently press the bagel cubes down with a spatula or spoon to soak up the custard.
  8. Sprinkle 2 tablespoons of everything bagel seasoning evenly on top.
  9. Cover the dish tightly with plastic wrap or aluminum foil and refrigerate overnight (at least 6 hours).
  10. The next morning, remove the casserole from the fridge and let it sit at room temperature for about 15 minutes.
  11. Remove the cover and bake in the preheated oven for 45–50 minutes until the top is golden brown and the casserole is set (a knife inserted near the center should come out clean).
  12. If the top browns too quickly, tent with foil after 30 minutes of baking.
  13. Let the casserole cool for 5-10 minutes before slicing and serving.

Notes

Use day-old bagels to avoid mushiness. Double the everything bagel seasoning on top for extra crunch but be cautious of saltiness. Crisp bacon adds smoky flavor without greasiness. Let casserole rest overnight for best texture. Let sit at room temperature before baking for even cooking. Tent with foil if browning too fast. Can substitute bacon with sautéed mushrooms or roasted peppers for vegetarian version. Use gluten-free bagels or bread for gluten-free adaptation.
