Easy Overnight Peanut Butter Banana Oats

Creamy, no-cook overnight oats with peanut butter and banana, perfect for busy mornings. Prep in 5 minutes and enjoy a delicious, satisfying breakfast all week.

  • 1 cup (90g) rolled oats
  • 1 cup (240ml) milk (dairy or non-dairy)
  • 1/4 cup (60g) plain Greek yogurt
  • 1 tablespoon (15g) chia seeds (optional)
  • 1 medium ripe banana, mashed
  • 2 tablespoons (32g) creamy peanut butter
  • 1 tablespoon (15ml) honey or maple syrup
  • 1/2 teaspoon (2.5ml) vanilla extract
  • Pinch of salt (about 1/8 teaspoon)
  • Optional toppings: sliced banana, drizzle of peanut butter, chopped peanuts, dark chocolate chips, cinnamon

Instructions

  1. In a small mixing bowl, mash the ripe banana with a fork until mostly smooth.
  2. Add the peanut butter, milk, Greek yogurt, honey or maple syrup, vanilla extract, and a pinch of salt. Stir until well combined and no streaks of peanut butter remain.
  3. Pour in the rolled oats and chia seeds (if using). Stir until all oats are coated. The mixture will be liquidy.
  4. Divide the mixture evenly into 2-3 Mason jars or airtight containers, leaving about an inch of space at the top.
  5. Seal the jars and refrigerate for at least 4 hours, preferably overnight.
  6. Before serving, stir the oats. Add desired toppings (sliced banana, peanut butter drizzle, etc.). Eat cold or microwave for 30-45 seconds for warm oats.

Notes

Use ripe bananas with brown spots for natural sweetness. If using thick natural peanut butter, warm it slightly for easier mixing. Don’t skip the salt—it enhances the flavors. For best texture, use rolled oats, not instant or steel-cut. The oats will keep in the fridge for up to 5 days, but are best within 3 days.
