Easy Rainbow Veggie Bento Box with Ranch Dip

A colorful and satisfying lunch featuring a rainbow of fresh vegetables paired with a creamy homemade ranch dip. Perfect for meal prep, this bento box is quick to assemble and packed with nutrients.

  • 1 large red bell pepper, sliced into strips
  • 2 medium orange carrots, peeled and cut into sticks
  • 1 cup yellow corn, cooked and cooled
  • 1 cup green snap peas, ends trimmed
  • 1 cup purple cabbage, shredded
  • 1 cup cherry tomatoes, halved
  • 1 medium English cucumber, sliced into rounds
  • 1 cup plain Greek yogurt
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon lemon juice

Instructions

  1. Make the Ranch Dip: In a small bowl, combine Greek yogurt, chopped dill, parsley, garlic powder, onion powder, salt, pepper, and lemon juice. Stir until well combined. Cover and refrigerate while prepping vegetables.
  2. Wash and dry all vegetables thoroughly. Pat them completely dry with a clean towel to prevent sogginess.
  3. Prep the red bell pepper: Cut off the top and bottom, slice open to remove membrane and seeds, then slice into thin strips about 1/4 inch wide.
  4. Cut the carrots: Peel and cut off tops and bottoms. Slice into sticks about 3 inches long and 1/4 inch thick.
  5. Prepare the snap peas: Snap off the stem end and pull the string down the side. Leave whole.
  6. Shred the purple cabbage: Cut into thin shreds, about 1/8 inch wide.
  7. Slice the cucumber into rounds about 1/4 inch thick. Halve the cherry tomatoes.
  8. Assemble the bento box: Arrange vegetables by color in compartments. Place ranch dip in the largest compartment or a separate small container.

Notes

Keep vegetables thoroughly dry to maintain crunch. The ranch dip improves after sitting in the fridge for a few hours. For a dairy-free version, use coconut yogurt or cashew cream. Store assembled bento boxes without dip for up to 4 days.
