A quick and easy sheet pan recipe featuring moist, flaky salmon with bright lemon dill and tender-crisp roasted asparagus, perfect for a nourishing weeknight dinner.

Ingredients

Scale
  • 4 skin-on salmon fillets, about 6 ounces (170 g) each
  • 1 bunch fresh asparagus, trimmed
  • 1 large lemon, thinly sliced (zest and juice)
  • 2 tablespoons fresh dill, chopped
  • 2 cloves garlic, minced
  • 2 to 3 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: red pepper flakes
  • Optional: splash of white wine

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Rinse and trim the tough ends off the asparagus. Pat dry.
  3. Toss asparagus in a mixing bowl with 1 tablespoon olive oil, salt, and pepper.
  4. Spread asparagus in a single layer on one side of a rimmed sheet pan.
  5. In a small bowl, combine 2 tablespoons olive oil, lemon juice and zest, minced garlic, chopped dill, salt, and pepper. Mix well.
  6. Place salmon fillets skin side down on the empty side of the sheet pan.
  7. Brush salmon generously with the lemon dill mixture and lay lemon slices on top.
  8. Roast in the oven for 12-15 minutes until salmon flakes easily and asparagus is tender-crisp with slight char.
  9. Check salmon doneness with a fork or internal temperature of 125°F (52°C).
  10. Serve immediately, spooning pan juices over salmon and asparagus. Garnish with extra dill if desired.

Notes

Prep the lemon dill mixture ahead and refrigerate up to 24 hours. Avoid overcrowding the pan to ensure proper roasting. Use fresh asparagus for best texture. Thicker salmon fillets may require a few extra minutes of cooking. For a dairy-free option, keep the recipe as is. Can substitute asparagus with green beans or broccolini. For low-FODMAP, omit garlic or use garlic-infused oil.
