A quick and easy no-cook breakfast assembly using pre-made pancakes and a variety of fresh toppings, perfect for busy mornings or casual brunches.

Ingredients

Scale
  • 68 pre-made buttermilk or whole wheat pancakes
  • Sliced strawberries
  • Blueberries
  • Banana slices
  • Mandarin segments
  • Creamy peanut butter or almond butter
  • Greek yogurt or dairy-free coconut yogurt
  • Honey or maple syrup
  • Granola or chopped walnuts/pecans
  • Optional: mini chocolate chips, shredded coconut, chia seeds, cinnamon

Instructions

  1. Lay out 6 to 8 pre-made pancakes evenly on your serving board, slightly overlapping or arranged in a circle.
  2. Wash and slice strawberries, bananas, and peel mandarin segments. Arrange them in small clusters around the pancakes. Scatter fresh blueberries freely.
  3. Spoon Greek yogurt, peanut butter, and honey or maple syrup into separate small bowls or ramekins and place on the board.
  4. Sprinkle granola or chopped nuts in small piles near the pancakes and fruits.
  5. Scatter optional extras like mini chocolate chips, chia seeds, or shredded coconut over the fruit or yogurt.
  6. Drizzle a little honey or maple syrup over the pancake stacks or leave it on the side for dipping. Optionally dust with cinnamon or powdered sugar.
  7. Serve immediately and encourage guests to build their own pancake combinations.

Notes

Use fresh refrigerated pancakes that hold up well to avoid sogginess. Assemble the board just before serving to keep pancakes fresh. Room temperature yogurt spreads better and tastes fresher. Use contrasting colors for visual appeal. Store leftovers separately and reassemble before eating.
