  • 4 cups chopped rhubarb stalks (about 600 grams or 1.3 pounds)
  • 2/3 cup granulated sugar (130 grams)
  • 1/2 cup water (120 ml)

Instructions

  1. Rinse the rhubarb stalks under cold water to remove any dirt. Trim off the leaves and woody ends. Chop the stalks into roughly 1/2-inch pieces.
  2. In a medium saucepan, combine the chopped rhubarb, sugar, and water. Stir to mix.
  3. Place the pan over medium heat and bring to a gentle boil. Reduce heat to low and simmer uncovered for 12–15 minutes, stirring occasionally until the rhubarb breaks down and the mixture thickens.
  4. Check the texture; the sauce should be soft with small chunks. For a smoother sauce, mash gently or use an immersion blender carefully.
  5. Remove from heat and let cool to room temperature. Transfer to a clean jar or container and refrigerate.

Notes

Do not rush the simmering step to avoid mushy sauce. Stir often to prevent sticking and burning. For a natural sweetness boost, add a teaspoon of honey or maple syrup during cooking. Use non-stick pans for easier cleanup. Frozen rhubarb can be used if thawed and drained well.
