  • 1 cup old-fashioned rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1/2 cup unsalted butter, cold and cut into small cubes
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. Prep the apples (15 minutes): Peel, core, and slice your apples into 1/4-inch thick slices. Toss with lemon juice immediately to prevent browning.
  2. Make the filling (5 minutes): In a large bowl, whisk together granulated sugar, brown sugar, cornstarch, cinnamon, nutmeg, and salt. Add apple slices and toss until evenly coated. Let sit for 5 minutes.
  3. Toast the oats (5 minutes): Heat a small skillet over medium heat. Add rolled oats and toast, stirring frequently, until fragrant and lightly golden (3-4 minutes). Remove from heat and let cool slightly.
  4. Make the streusel (5 minutes): In a medium bowl, whisk together flour, brown sugar, cinnamon, and salt. Add cold butter cubes. Using a pastry cutter or fingertips, work butter into dry ingredients until mixture resembles coarse crumbs with some pea-sized butter pieces. Stir in toasted oats and nuts if using. Refrigerate.
  5. Layer the filling (5 minutes): Lightly grease the inside of your slow cooker with butter or non-stick spray. Transfer apple mixture (including juices) into the slow cooker and spread into an even layer.
  6. Add the streusel (2 minutes): Sprinkle chilled streusel evenly over the apples. Do not press down.
  7. Cook low and slow: Cover and cook on LOW for 3-4 hours or on HIGH for 2-3 hours, until apples are tender and filling is bubbling around the edges.
  8. Rest before serving (10-15 minutes): Turn off slow cooker, remove lid, and let crisp sit for at least 10 minutes to allow filling to thicken.
