Ingredients

Scale
  • 2 lbs boneless, skinless chicken breasts (about 4 large breasts)
  • 1 cup buffalo wing sauce (preferably Frank’s RedHot Original)
  • 4 tablespoons unsalted butter, cut into small pieces
  • 1 tablespoon dry ranch dressing mix
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • 1216 slider buns (recommend Martin’s Potato Rolls)
  • Blue cheese or ranch dressing for serving
  • Optional toppings: thinly sliced celery, shredded lettuce, crumbled blue cheese

Instructions

  1. Prep the Chicken (5 minutes): Pat the chicken breasts dry with paper towels. Trim off any visible fat. Season both sides lightly with salt and pepper.
  2. Mix the Seasonings (2 minutes): In a small bowl, combine the ranch dressing mix, garlic powder, and onion powder. Stir to combine.
  3. Layer in the Slow Cooker (3 minutes): Place the chicken breasts in the bottom of the slow cooker in a single layer. Sprinkle the seasoning mixture evenly over the chicken. Pour the buffalo wing sauce over the top. Dot the top with the small pieces of butter. Do not stir.
  4. Cook Low and Slow (4-5 hours on LOW or 2-3 hours on HIGH): Cover and cook. The chicken is done when it’s fall-apart tender and reaches an internal temperature of 165°F. About 30 minutes before it’s done, use a spoon to break the chicken into large chunks so it absorbs more sauce.
  5. Shred the Chicken (5 minutes): Carefully remove the chicken from the slow cooker to a cutting board or large bowl. Use two forks to shred the chicken into bite-sized pieces. Discard any large fatty bits. Return the shredded chicken to the slow cooker and stir it into the sauce. Let it sit in the sauce for 10-15 minutes to soak up all that flavor.
  6. Toast the Buns (5 minutes): While the chicken rests, preheat your oven to 350°F. Split the slider buns in half and place them cut-side up on a baking sheet. Bake for 3-5 minutes until lightly golden.
  7. Assemble the Sliders (5 minutes): Spoon a generous amount of the shredded buffalo chicken onto the bottom half of each bun. Use a slotted spoon or tongs to let excess sauce drip off. Top with a drizzle of blue cheese or ranch dressing, and any optional toppings. Place the top bun on and press gently.
  8. Serve Immediately: These are best served warm, right after assembly. Arrange them on a platter and watch them disappear.

Notes

For a thicker sauce, mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir into the slow cooker, then cook on HIGH for 10-15 minutes. To make it dairy-free, use vegan butter and dairy-free ranch dressing. For a vegetarian version, substitute shredded jackfruit and reduce cooking time.
