These easy slow cooker buffalo chicken sliders are the ultimate game day recipe. Simple enough for a beginner cook, impressive enough for a party, and delicious enough to become a regular in your meal rotation.

Ingredients

Scale
  • 2 pounds boneless skinless chicken breasts
  • 1 cup Frank’s RedHot Original Cayenne Pepper Sauce
  • 1/2 cup unsalted butter, cubed
  • 1 packet (about 1 ounce) ranch seasoning mix
  • 12 to 15 slider buns (brioche or potato rolls recommended)
  • 1/2 cup blue cheese crumbles (optional)
  • 2 cups coleslaw mix (optional)
  • Ranch or blue cheese dressing for drizzling (optional)
  • Salt and pepper to taste
  • Oil for browning chicken

Instructions

  1. Brown the chicken: Heat a large skillet over medium-high heat and add a drizzle of oil. Season chicken breasts with salt and pepper, then sear for 3-4 minutes per side until golden brown. Transfer to slow cooker.
  2. Make the sauce: In a small bowl, whisk together Frank’s RedHot, cubed butter, and ranch seasoning. Pour over chicken in slow cooker, coating all pieces.
  3. Cook low and slow: Cover and cook on LOW for 4-5 hours or on HIGH for 2-3 hours until chicken is tender and shreds easily.
  4. Shred the chicken: Remove chicken from slow cooker and shred using two forks or a hand mixer on low speed.
  5. Return to sauce: Put shredded chicken back into slow cooker, stir into sauce, and cook for another 15-20 minutes on LOW. Taste and adjust seasoning.
  6. Toast the buns (optional but recommended): Split slider buns and toast lightly under broiler or in a dry skillet.
  7. Assemble the sliders: Spoon buffalo chicken onto bottom half of each bun. Top with blue cheese crumbles, coleslaw, and dressing if desired. Place top bun on and press gently.
  8. Serve immediately: Arrange on a platter and serve with extra sauce on the side.

Notes

Brown the chicken for extra flavor. Toast buns to prevent sogginess. Let chicken rest before shredding to keep it moist. For a thicker sauce, remove lid for last 30 minutes or stir in a cornstarch slurry.
