  • 1 ½ cups (300 g) granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • Optional: sanding sugar for rolling or sprinkling on top

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together sifted all-purpose flour, baking powder, cornstarch, and salt. Set aside.
  3. Using an electric mixer, beat softened unsalted butter and granulated sugar on medium-high speed for about 3-4 minutes until light and fluffy.
  4. Beat in eggs one at a time, then add pure vanilla extract, scraping down the bowl as needed.
  5. Gradually add the flour mixture in batches, mixing on low speed just until combined. Avoid overmixing.
  6. Use a cookie scoop or spoon to drop dough balls about 1 ½ inches wide onto prepared baking sheets, spaced about 2 inches apart. Optionally, flatten each ball gently with the bottom of a glass dipped in sugar or sprinkle sanding sugar on top.
  7. Bake for 10-12 minutes until edges are set and just starting to turn golden but centers remain soft.
  8. Let cookies rest on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
