A quick and easy recipe for creamy overnight oats infused with homemade strawberry chia jam, perfect for a nourishing and comforting breakfast.

  • 1 cup rolled oats (90g)
  • 1 cup fresh strawberries, hulled and chopped (150g) (frozen can be used, thawed)
  • 3 tablespoons chia seeds (30g)
  • 2 tablespoons maple syrup (30ml) (can substitute honey or agave)
  • 1 teaspoon vanilla extract
  • 1 ½ cups milk of choice (360ml) (dairy or plant-based such as almond or oat milk)
  • ½ cup Greek yogurt (120g) (optional, can substitute vegan yogurt)
  • ¼ teaspoon ground cinnamon
  • Pinch of salt

Instructions

  1. Prepare the strawberry chia jam: In a small saucepan, combine the chopped strawberries, maple syrup, vanilla extract, and a pinch of salt. Cook over medium heat, stirring frequently, until the strawberries break down and start to thicken, about 5-7 minutes.
  2. Add chia seeds: Stir in the 3 tablespoons of chia seeds and ground cinnamon. Continue cooking for another 2-3 minutes, stirring often to prevent clumps. The mixture will thicken further as it cools.
  3. Cool the jam: Remove the jam from heat and let it cool to room temperature.
  4. Mix the oats: In a mixing bowl or mason jar, combine the rolled oats, milk, and Greek yogurt (if using). Stir well to combine.
  5. Add the strawberry chia jam: Spoon in about half to two-thirds of the jam and swirl it through the oats mixture. Reserve some jam for topping if desired.
  6. Cover and refrigerate: Seal the jar or cover the bowl with a lid or plastic wrap. Refrigerate overnight, or for at least 6 hours.
  7. Serve: In the morning, give the oats a gentle stir. Add the reserved strawberry chia jam on top, and optionally fresh sliced strawberries, nuts, or a drizzle of maple syrup.

Notes

If oats are too thick in the morning, stir in a little extra milk to loosen. Jam can be made raw by mixing strawberries, chia seeds, and sweetener and letting sit overnight. Use rolled oats for best texture. Greek yogurt adds creaminess and protein but can be swapped for vegan yogurt for dairy-free version. Jam keeps well in fridge up to a week and oats up to 3 days.
