  • 12 slices cheese per roll-up (cheddar, provolone, Swiss, or mozzarella)
  • 23 tablespoons cream cheese, softened (or hummus for dairy-free, or mayonnaise mixed with Dijon mustard)
  • 1 8-inch or 10-inch flour tortilla per roll-up
  • Optional: lettuce leaves, thinly sliced cucumber, shredded carrots, avocado slices

Instructions

  1. Soften the cream cheese by letting it sit at room temperature for 10 minutes or microwaving for 5-10 seconds.
  2. Lay the tortilla flat on a cutting board. Ensure it is at room temperature.
  3. Spread a thin, even layer of cream cheese over the entire tortilla, leaving a 1/2-inch border around the edges.
  4. Place turkey slices flat over the cream cheese, overlapping slightly to cover the surface.
  5. Lay cheese slices on top of the turkey, overlapping slightly. Leave a 1-inch gap at the top edge of the tortilla.
  6. If using optional add-ins, place them in a thin line down the center of the tortilla.
  7. Roll the tortilla tightly starting from the edge closest to you, pulling back slightly to create tension. Keep the roll as tight as possible without tearing.
  8. Wrap the rolled tortilla tightly in plastic wrap, twisting the ends like a candy wrapper. Refrigerate for at least 30 minutes or up to 2 hours.
  9. Unwrap the chilled roll and place it on a cutting board. Using a sharp serrated knife, slice off the uneven ends (about 1/2 inch from each side). Then slice the remaining roll into 1-inch rounds using a gentle sawing motion.
  10. Arrange the pinwheels on a plate or in a lunchbox. If packing for later, place in a single layer with parchment paper between layers to prevent sticking.
