These easy turkey cucumber roll-ups with creamy Boursin cheese are a quick, healthy snack combining crisp cucumber, savory turkey, and rich, herby cheese for a fresh and satisfying bite.

Ingredients

  • Turkey slices – deli-style, thinly sliced (nitrate-free recommended)
  • Cucumber – fresh, medium-sized, preferably English cucumber
  • Boursin cheese – classic garlic and herb flavor
  • Fresh dill – finely chopped (optional)
  • Lemon zest – a pinch (optional)
  • Salt and pepper – to taste

Instructions

  1. Using a vegetable peeler, slice the cucumber lengthwise into thin, wide ribbons (about 6–8 strips per cucumber). Pat dry with a paper towel if watery.
  2. In a small bowl, combine Boursin cheese with chopped fresh dill and lemon zest if using. Stir well and set aside for 2 minutes.
  3. Lay one slice of turkey on a work surface. Spread about 1 tablespoon (15 grams) of the cheese mixture evenly over the turkey slice, leaving a small border.
  4. Place 2 cucumber ribbons lengthwise at one end of the turkey slice.
  5. Starting at the end with the cucumber ribbons, gently roll the turkey slice up to enclose the cucumber and cheese. Repeat with remaining slices.
  6. Arrange roll-ups on a serving platter. Optionally sprinkle with salt, pepper, or garnish with dill. Serve immediately or chill up to 1 hour before serving.

Notes

Pat cucumber ribbons dry to avoid soggy roll-ups. Use thin turkey slices for easier rolling. Chill roll-ups before serving to meld flavors and firm cheese. Can be stored covered in fridge up to 24 hours; bring to room temperature before serving.
