A festive and colorful poke cake featuring vibrant red and blue jello layers inside a moist white cake, topped with whipped cream and optional fresh berries. Perfect for summer occasions and celebrations.

Ingredients

Scale
  • 1 box white cake mix (e.g., Pillsbury)
  • Ingredients called for on the cake mix box (usually eggs, oil, water)
  • 1 package (3 oz) red jello (strawberry or cherry)
  • 1 package (3 oz) blue jello (blue raspberry or berry blue)
  • 2 cups boiling water (divided)
  • 2 cups cold water (divided)
  • 1 tub (8 oz) whipped topping, thawed (e.g., Cool Whip)
  • Optional: fresh berries for garnish (strawberries, blueberries)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan with butter or non-stick spray.
  2. Prepare the cake batter according to the box instructions, mixing cake mix with eggs, oil, and water until smooth (about 2-3 minutes with an electric mixer).
  3. Pour batter into the prepared pan and smooth the top with a spatula. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  4. While the cake bakes, dissolve each jello package separately: for each, stir 3 oz jello into 1 cup boiling water until dissolved, then add 1 cup cold water. Let cool slightly but do not set.
  5. Let the baked cake cool for about 10 minutes. Using a skewer or wooden spoon handle, poke holes about 1 inch apart over the middle area of the cake, avoiding edges.
  6. Pour the red jello mixture evenly over half of the cake. Let soak for about 10 minutes.
  7. Pour the blue jello mixture over the other half of the cake, filling the remaining holes. Let the cake absorb the jello for about 20 minutes at room temperature.
  8. Refrigerate the cake for at least 2 hours or until the jello is fully set inside the cake.
  9. Before serving, spread the whipped topping evenly over the cake. Garnish with fresh berries if desired.

Notes

Let the cake cool before poking holes to prevent crumbling. Use a firm skewer or chopstick for clean holes. Dissolve jello completely in boiling water before adding cold water. Pour jello slowly to avoid overflow. Chill long enough for jello to set fully. For fluffier topping, whip the Cool Whip a bit more before spreading. Use gluten-free cake mix for gluten-free version and coconut whipped cream for dairy-free. Fresh berries add antioxidants and vitamins. Avoid reheating as jello will melt.
