  • 1/2 cup (120 ml) vegetable oil or melted unsalted butter
  • 3/4 cup (150 g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (190 g) all-purpose flour (or almond flour for gluten-free)
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • Chai Spice Blend: 1 teaspoon ground cinnamon, 1/2 teaspoon ground cardamom, 1/4 teaspoon ground cloves, 1/4 teaspoon ground ginger
  • For the Brown Sugar Glaze:
  • 1/2 cup (100 g) packed light brown sugar
  • 1/4 cup (60 ml) unsalted butter
  • 2 tablespoons milk (dairy-free if preferred)
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a large bowl, mash the ripe bananas until smooth but still a bit chunky (about 1 cup/240 ml). Add the oil or melted butter, sugar, eggs, and vanilla extract. Beat with a hand mixer or whisk until combined and glossy, about 2-3 minutes.
  3. In a separate bowl, whisk together the flour, baking soda, salt, and chai spices.
  4. Gradually fold the dry ingredients into the wet ingredients using a spatula. Do not overmix; a few streaks of flour are okay.
  5. Pour the batter into the prepared loaf pan, filling it about 3/4 full.
  6. Bake for 50-60 minutes, starting to check at 50 minutes by inserting a toothpick into the center. It should come out clean or with a few moist crumbs.
  7. While baking, prepare the brown sugar glaze: melt butter in a small saucepan over medium heat. Add brown sugar and milk, stirring constantly until sugar dissolves and mixture thickens slightly (3-4 minutes). Remove from heat and stir in vanilla extract.
  8. When the bread is out of the oven and still warm, poke holes on top with a toothpick or skewer. Pour the glaze evenly over the bread and allow it to soak in.
  9. Let the bread cool in the pan on a wire rack for about 15 minutes, then remove from pan and cool completely before slicing.

Notes

Use overripe bananas with brown spots for best sweetness and moisture. Fold dry ingredients gently into wet to avoid tough bread. Pour glaze while bread is warm for best absorption. Tent with foil if browning too quickly. Store wrapped tightly; freezes well.
