These pancakes are fluffy, protein-packed, and naturally sweetened with ripe bananas, making them a quick and healthy breakfast option perfect for busy mornings.

  • 2 large ripe bananas, mashed
  • 1 cup (90g) rolled oats, ground into oat flour
  • 1 scoop (about 30g) vanilla or unflavored whey or plant-based protein powder
  • 2 large eggs, room temperature
  • ½ cup (120ml) milk of choice (dairy or dairy-free)
  • 1 teaspoon baking powder
  • ½ teaspoon ground cinnamon (optional)
  • 1 teaspoon pure vanilla extract
  • A pinch of salt
  • Cooking oil or butter for greasing the pan (coconut oil recommended)

Instructions

  1. Add the rolled oats to your blender and pulse until you have a fine flour-like texture, about 30 seconds. Avoid overblending.
  2. Add mashed bananas, eggs, milk, and vanilla extract to the oat flour. Blend until smooth, about 20-30 seconds. Batter should be pourable but thick.
  3. Add protein powder, baking powder, cinnamon, and salt to the blender. Pulse a few times to combine evenly. Add more milk by tablespoon if batter is too thick.
  4. Heat a non-stick skillet or griddle over medium heat and lightly grease with oil or butter. Wait 2-3 minutes until hot but not smoking.
  5. Pour ¼ cup (60ml) batter per pancake onto the pan. Cook 2-3 minutes until edges set and bubbles form on top, bottoms golden brown.
  6. Flip pancakes carefully and cook another 1-2 minutes until golden and springy to touch.
  7. Serve warm with toppings like fresh fruit, nut butter, or maple syrup.

Notes

Do not overblend oats to avoid oat butter. Use ripe bananas for natural sweetness. Preheat pan properly to avoid burning. Flip pancakes only once when bubbles form and edges set. Batter can rest 5-10 minutes to thicken. Adjust batter consistency with milk or oat flour as needed. Vegan option: replace eggs with flax eggs and use plant-based protein and non-dairy milk.
