  • ½ cup (75 g / 2.6 oz) sun-dried tomatoes packed in oil
  • 1 small garlic clove, minced
  • 1 tablespoon (15 ml) extra virgin olive oil
  • 1 teaspoon (5 ml) balsamic vinegar
  • Salt and black pepper to taste
  • Optional: red pepper flakes for a slight kick

Instructions

  1. Prepare the Sun-Dried Tomato Spread: In a blender or food processor, combine sun-dried tomatoes, minced garlic, olive oil, balsamic vinegar, salt, and pepper. Blend until smooth but slightly textured. Adjust seasoning and add red pepper flakes if desired.
  2. Slice Fresh Ingredients: Thinly slice Roma tomatoes and fresh mozzarella into 1/4 inch (0.6 cm) rounds. Tear or leave basil leaves whole.
  3. Spread the Base: Lay each tortilla flat and spread about 2 tablespoons (30 g) of the sun-dried tomato spread evenly over each, leaving a 1/2 inch (1.25 cm) border.
  4. Layer the Fillings: Arrange mozzarella slices evenly over the spread, then top with tomato slices and scatter basil leaves.
  5. Roll and Chill: Roll each tortilla tightly into a log, tucking in edges. Wrap tightly in plastic wrap or parchment paper and refrigerate for at least 10 minutes.
  6. Slice into Pinwheels: Remove from fridge, unwrap, and slice each roll into 1-inch (2.5 cm) thick pinwheels. Arrange on a platter, sprinkle with black pepper, and serve immediately.
