  • 1 cup fresh or frozen corn kernels
  • 1 cup cherry tomatoes, quartered
  • 1 small red bell pepper, finely diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped (optional)
  • 2 ripe avocados, mashed
  • 1/4 cup Greek yogurt or sour cream
  • 1 tablespoon lime juice, freshly squeezed
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 1/2 teaspoon cumin powder
  • 1/4 teaspoon smoked paprika (optional)
  • 12 tablespoons olive oil, extra virgin

Instructions

  1. In a medium bowl, combine the drained and rinsed black beans, corn kernels, quartered cherry tomatoes, diced red bell pepper, and finely chopped red onion. Toss gently to mix all the fresh veggies evenly.
  2. In a separate small bowl, mash the ripe avocados using a fork or potato masher until smooth but still slightly chunky. Add Greek yogurt, lime juice, minced garlic, cumin powder, smoked paprika (if using), salt, and pepper. Stir everything together until creamy and well blended.
  3. Add the creamy avocado dip to the bowl with the cowboy caviar mixture. Gently fold everything together until the veggies are coated in the creamy avocado base but retain their distinct textures and colors. Avoid over-mixing to keep that fresh crunch.
  4. Drizzle olive oil over the dip and gently stir. Taste and adjust salt, pepper, or lime juice as needed. If you want more heat, add diced jalapeño or a pinch of cayenne.
  5. Transfer to a serving bowl and garnish with extra cilantro leaves or a sprinkle of smoked paprika for color. Serve immediately with tortilla chips, crisp veggies, or as a topping for grilled meats. Optionally chill for 15 minutes to let flavors meld.

Notes

Rinse canned beans to reduce salt and starch. Leave avocado slightly chunky for texture. Use fresh lime juice for best flavor. Gently fold ingredients to keep crunch. Prepare bean and veggie mix ahead but add avocado dip last minute to avoid browning.
