Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel and slice about 6 large peaches. Toss them gently in a large bowl with 3/4 cup granulated sugar, 1/4 cup brown sugar, 1 teaspoon cinnamon, and 1 tablespoon fresh lemon juice. Let sit for 10 minutes to release juices and meld flavors.
  3. In a medium bowl, whisk together 1 1/2 cups all-purpose flour, 1 tablespoon baking powder, and 1/2 teaspoon salt. Cut in 1/2 cup cold, cubed unsalted butter using a pastry cutter or two forks until mixture resembles coarse crumbs with pea-sized butter bits.
  4. Pour in 3/4 cup whole milk or buttermilk and 1 teaspoon vanilla extract (if using). Stir gently with a spatula just until combined; do not overmix. Dough should be shaggy but hold together when pressed.
