A refreshing summer drink featuring fresh peaches, mint, and lemon steeped in black tea, perfect for hot days and gatherings.

Ingredients

Scale
  • 3 medium ripe peaches, pitted and sliced
  • 4 black tea bags
  • 1015 fresh mint leaves, washed and lightly bruised
  • 1 large lemon, juiced (plus extra slices for garnish)
  • 1/3 cup granulated sugar (adjust to taste; can substitute honey or agave)
  • 6 cups filtered or spring water
  • Ice cubes for serving

Instructions

  1. In a saucepan, combine sliced peaches and 2 cups of water. Bring to a gentle simmer over medium heat and simmer for about 10 minutes, stirring occasionally.
  2. Remove from heat and stir in 1/3 cup granulated sugar until dissolved. Add 4 black tea bags and steep for 5 to 7 minutes, pressing tea bags gently with a spoon.
  3. Remove tea bags and strain peach mixture through a fine mesh strainer into a pitcher. Add remaining 4 cups of cold water to the pitcher.
  4. Stir in freshly squeezed lemon juice and bruised mint leaves. Cover and refrigerate for at least 1 hour to chill and meld flavors.
  5. Serve over ice cubes and garnish with fresh peach slices, lemon wheels, and a sprig of mint.

Notes

Use ripe but firm peaches to avoid mushy tea. Do not over-steep tea bags to prevent bitterness. Lightly bruise mint leaves to release oils without bitterness. Chill tea for at least 1 hour for best flavor. Adjust sweetness after chilling by adding more lemon juice or simple syrup as needed.
