Fresh Prosciutto-Wrapped Melon Bites Recipe Easy Mint Sea Salt Appetizer

A simple, elegant appetizer combining sweet melon cubes wrapped in thin prosciutto strips, fresh mint leaves, and a sprinkle of flaky sea salt for a refreshing summer snack.

Ingredients

  • 1 small cantaloupe or honeydew melon, peeled, seeded, and cut into 1-inch cubes
  • 68 thin slices of prosciutto, torn into strips roughly the size of the melon cubes
  • 1520 small fresh mint leaves, washed and patted dry
  • Flaky sea salt (such as Maldon or Fleur de Sel) for sprinkling
  • Optional: freshly cracked black pepper

Instructions

  1. Cut the melon in half and scoop out the seeds with a spoon. Peel the rind carefully, then cut the flesh into 1-inch cubes.
  2. Lay out the prosciutto slices on a clean surface and tear each slice into strips roughly the size of the melon cubes.
  3. Take one melon cube and a small mint leaf, then wrap the prosciutto strip around them together. Secure with a toothpick or skewer. Repeat until all melon cubes are wrapped.
  4. Place the wrapped melon bites on a serving platter. Just before serving, sprinkle flaky sea salt evenly over the bites. Optionally, add a light grind of freshly cracked black pepper.
  5. Serve immediately. If preparing ahead, wrap and chill in the fridge covered with plastic wrap for up to 2 hours, adding sea salt just before serving.

Notes

Use the thinnest prosciutto slices for best wrapping. Keep melon and prosciutto cold until assembly. Pat mint leaves dry to maintain freshness. Add sea salt just before serving to keep texture crisp. Optional grilling: grill wrapped bites 30 seconds per side for smoky flavor.
