  • 1 cup (240 ml) whole milk ricotta cheese
  • 1/2 cup (115 g) unsalted butter, softened to room temperature
  • 3 tablespoons raw or wildflower honey
  • 2 tablespoons mixed fresh herbs, finely chopped (thyme, rosemary, chives)
  • Zest of 1 medium lemon
  • 1/2 teaspoon flaky sea salt (such as Maldon)
  • Crackers or bread for serving (sourdough baguette slices, whole grain crackers, or seeded crisps)
  • Edible flowers (optional, such as nasturtiums or pansies)

Instructions

  1. Place 1 cup (240 ml) of whole milk ricotta into a mixing bowl. Using an electric mixer on medium speed, whip for about 2-3 minutes until fluffy and light. Add a teaspoon of milk if needed to loosen the texture.
  2. In a separate bowl, combine 1/2 cup (115 g) softened unsalted butter with 2 tablespoons finely chopped fresh herbs, lemon zest, and a pinch of sea salt. Mix well until fragrant and evenly combined.
  3. On a wooden or slate serving board, spread the whipped ricotta in a large rustic puddle. Next to it, spread the herbed butter similarly, creating swirls and peaks with an offset spatula.
  4. Generously drizzle 3 tablespoons of raw honey over the whipped ricotta and around the board.
  5. Sprinkle flaky sea salt over the butter and ricotta. Scatter edible flowers and lemon zest curls on top. Arrange crackers or sliced bread around the board for serving.
  6. Optional: Add small bowls of olives, roasted nuts, or fresh berries around the board for extra color and texture.

Notes

Use whole milk ricotta for best whipping results. Soften butter to room temperature for easy mixing. Whip ricotta just before assembling for best texture. Warm honey slightly if too thick for drizzling. Assemble board just before serving to keep honey shiny and butter soft. For vegan version, substitute ricotta with whipped cashew cream or vegan ricotta, butter with dairy-free alternative, and honey with maple syrup.
