A quick and refreshing summer salad combining juicy watermelon, salty feta, and fresh mint with a light olive oil dressing. Perfect for warm days and easy gatherings.

Ingredients

  • 4 cups (600g) seedless watermelon, cubed
  • 1 cup (150g) crumbled feta cheese
  • 1/4 cup (15g) fresh mint leaves, roughly chopped or torn
  • 2 tablespoons (30ml) extra virgin olive oil
  • Freshly ground black pepper, to taste
  • Sea salt, to taste
  • Optional: juice of half a lime or lemon

Instructions

  1. Cut watermelon into roughly 1-inch (2.5 cm) cubes and transfer to a large mixing bowl.
  2. Crumble 1 cup (150g) of feta cheese with fingers or fork and set aside.
  3. Rinse and dry fresh mint leaves, then roughly chop or tear about 1/4 cup (15g).
  4. In a small bowl, whisk together 2 tablespoons (30ml) extra virgin olive oil, a pinch of sea salt, freshly ground black pepper, and optional lime or lemon juice.
  5. Pour the dressing over the watermelon cubes, then gently fold in the crumbled feta and chopped mint, being careful not to crush the watermelon.
  6. Taste and adjust seasoning with additional salt or pepper if needed.
  7. Serve immediately or chill for up to 15 minutes before serving.

Notes

Use ripe watermelon for best flavor. Be gentle when folding ingredients to avoid crushing watermelon cubes. Serve fresh or chilled up to 15 minutes. Avoid making too far ahead to prevent sogginess. Fresh mint is essential; basil or cilantro can be used as alternatives. Optional lime or lemon juice adds brightness.
