Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. Grate the zucchini using a box grater or food processor. Gently squeeze out excess moisture using a clean kitchen towel or paper towels so it is moist but not soggy.
  3. Melt the chopped semi-sweet chocolate in a microwave-safe bowl in 20-second bursts, stirring between each until smooth and glossy. Let cool slightly.
  4. In a large bowl, whisk together cocoa powder, granulated sugar, baking powder, and salt until well combined.
